Wine Review: Spring Street Winery Paso Robles Cabernet Sauvignon (California, 2017)
Spring Street Paso Robles Cabernet Sauvignon is quite bold and dry with moderate acidity. Tasting notes include blackberry, plum, ripe cherry, & a bit of vanilla. This wine’s texture is silky and soft. The black and red fruits are balanced by subtle mocha and Tahitian vanilla notes. It finishes elegantly with a gentle balance between acidity and tannins.
This cab sauv is a great wine to drink all by itself, but it also goes wonderfully with a fine meal. This is also a good choice for using to make a red wine reduction. The taste of the dark fruits pairs excellent with steaks or meaty pastas. If you’re looking for a great way to prepare a steak to enjoy with this wine, try serving it with my Greek marinated flank steaks.
This wine can be enjoyed immediately or stored for up to 10 years. The proper storage temperature range is between 55-59°F with 55-75% humidity. When storing, keep this bottle on its side, horizontally, at a slightly negative inclination. This keeps the wine in constant contact with the cork. The wine must touch the cork in order to keep the cork swollen so no air can seep into the bottle. Do not store this bottle upright. This will cause the cork to dry out and oxygen will enter the bottle, causing the wine to chemically change & spoil. Additionally, you don’t want to store this bottle upside down, as it will cause sediment to collect in the cork over time and damage the wine.
